Mail>prefs>rules. 

Add rules 

then decide how you want to treat the mail. It will work on any mail when you 
right click and apply rules on any mail that you have highlighted. 

What I have it do is to sort all my mail into the individual folders. You can 
add as many sub filters depending on what you need to do.  Mark the mail as 
unread so that when you apply the rules you can find it when it does not do 
what you want. Then you can edit it again and try it until it works. It is a 
matter of experimentation.
