Thanks Paul,
I did momentarily get a pdf made up with 3 different pdfs, saved a version and 
then on one of the pdfs I clicked Revert to Save and the pdf with the 3  came 
back but now that I have closed it can't find it again.
I'm sure you're right but how appallingly obscure and clunky compared to 
Preview in 10.6
Will ask at the Genius Bar tomorrow just in case there's another way as well.
