I use an iPad Pro too so that's a good start!

Read all of this first. You may prefer the 2nd quicker method. 👍 

To create an initial set of albums:
Open Photos
(Landscape is probably best)
Ensure that the sidebar is showing
At the top of the sidebar, tap edit
Scroll down so that you can see the My Albums heading
If it's not open, tap the > to the right
Scroll to the bottom of the album list
Tap New Album and name it
Tap Done at the top of the sidebar
You now have your album 🙂
Repeat the New Album part as required

THEN

Tap on a single photo OR select multiple photos
Tap the Share button
Scroll down a bit
Tap Add to Album
Tap the album to which to add your photo(s)
Done

-- OR, A QUICKER WAY --

Select one or more photos
Tap Share
Scroll down a little
Tap Add to Album
Under the blank album, tap New Album...
Name it
Tap Save
Done!



To view an album’s contents:
Make sure the sidebar is showing
Scroll down to My Albums
Tap the > to open My Albums if needed
Scroll down to your album
Tap it to see its contents

I hope that helps. Ask me tomorrow if it's not quite clear.

Finally ... when viewing a single photo, if you flick it up a little there is 
an area below saying Add a Caption. Type in a description of your photo. You 
can then search for this later in the search box. I use this all the time.

Also, a reminder that Photos analyses your photos when added, so if in the 
search box you type celebration, parks, boats, cats, wedding, football, cars, 
buildings, clouds, beach, etc, etc, etc you will find it will find about 90% of 
your matching photos. This is built in, you don’t have to do it!
