I haven't seen numbers for Vonage specifically, but regular telephone uses less than 64k per voice channel.
VOIP has the capacity to be lower using various compression techniques including empty-space compression (the dead air in between words.) The issues you probably heard about tend to be application level problems, not bandwidth consumption.
