At least one I know of, Saint Brigit, is a metamorphozed Irish deity, Brigit, 
though what precisely her "portfolioi" was, I don't know.  I think she may 
well have been the goddess of childbirth and the family hearth amongst other 
things ... ;)  I may be wrong.

And the saints of Tibetan Buddhism in a very large number of cases happen to 
be the gods of the pre-Buddhist Bod religion - in large part scrubbed of 
their more garish aspects.

If you have a god whose "portfolio" is "chance", then a black cat indicating 
bad luck heading your way is just his little joke on you.
