You may want to take a look at NFPA 45 (Standard on Fire Protection for
Laboratories Using Chemicals), I'm not sure if there's a minimum square footage
that gets you away from the application of that standard, but table 10.1.1
calls for OH2 for class A or B fire hazard labs, C and D would be OH1. I don't
use the standard much to know it inside and out, but it may be applicable to
your situation.

Subject: Occupancy Classification

I have a facility that tests potatoes for flavor, texture, etc... This
particular use will be inside an existing facility where they are adding
walls and a mezzanine to create two small labs. Neither level will be over
1,100 sf with 8'6" ceilings. I'm thinking that it needs to be classified
as OH 1 having a similar function as to a "Dairy products manufacturing and
processing" facility. This is based on the Annex of NFPA 13, 2010 ed.,
A.5.3.1. Would anyone think that this should be classified differently?

Thanks,
