We'll all tell you different things, there, but fo the mid-nineties
PowerMacs and PPC-like machines I really like OS 8.1. Nothin' snazzy, just
quick and responsive.

I use it in my C500, StarMax 4000, PPC 8500, PPC 7300. It just seems to
wring some extra speed out of the architecture for me.
