I've been using SpamCop for a few years now. While not 100% effective, it certainly has come in handy when I've suddenly been inundated with a flood of spam in getting it stopped. One pleasant surprise was finding out one ISP was able to find and take action against a cell using the Nigerian bank scam due to SpamCop reports!
One suggestion if you're using OS X - there's a couple of tools which help to automate sending and receiving Spamcop, one adds a special "Report Spam" command in the Message menu in mail (select all the spam in your Junk section and use this command to automatically report it to SpamCop), the other, an Applescript called SpamRoboCop, will allow you to confirm reports to SpamCop and calls up Safari so you can send the final reports. You should be able to find both via VersionTracker .
