And you can have black for the text color in the reply window. :) But
not with the help of a menu. After asking Google and testing with my SM
16.a1 you have to put the following lines into the file userContent.css.

/* Set color for quoted text when composing message */
span[_moz_quote=true] {
color: black !important;
}

The userContent.css is located in the subdirectory chrome of your
profile. If either one not exists it has to be created. After a restart
of SM the text color in the reply window is black.
Further questions about where your profile is, how to create the
subdirectory chrome and there the file userChrome.css, which editor
would be recommended and which one has to be avoided ;) must be answered
by those familiar with your OS.
