Currently my tendency is increasingly to not sign messages at all. Message signatures are somewhat of an anachronism, since anyone can see my name by just looking at the message headers. Putting "Anthony" at the end when this is the first thing they see at the top of the message window seems highly redundant. Ultimately, if I "sign" messages at all, it will probably only be a digital signature, such as PGP (if that ever works correctly--ahem!), since at least that type of signature serves a purpose. By changing the list footers to begin with a "--" instead of a long line, you could get those to be automatically excluded from quotes as well. As far as I know, most e-mail clients that care stop at the first "--" line, so if there are several, everything from the first occurrence on will go away. One thing I'm curious about while replying to this list: Why does The Bat reply to the correct e-mail address, but still prefix it with the friendly name of the original sender?
