It seems disabling Google Chrome updates requires a little registry
editing.
If you are comfortable doing that, the instructions I found are located

Another possibility might be to download Chromium, the open source browser
project which powers Google Chrome. The URL for that is:
http://www.chromium.org/
Hopefully, one of those will meet your needs.
Or SRWare Iron, as I suggested earlier:
http://www.srware.net/en/software_srware_iron.php
Just like Chrome, but without the broken security and privacy, and without
mandatory auto-updating.
