Ultimately, it comes down to guest availability. When an artist is in New York or LA promoting an album or a movie, they will tape segments for all the major talk shows in town (because why make multiple trips?), but ultimately producers and managers don't want the same guest on the same night (or even the same week) as it lessens the promotional aspect of the bookings, so some segments will be aired at a later date. It used to be that The Tonight Show always got first crack at the major guests and would always air same-day, but I hear this is no longer the case. In the early days of Leno, his Tonight Show notoriously refused to book any guest who appeared on other talk shows, but that changed when he dropped the Wicked Agent of the West (see Bill Carter's book for the details).
