So, it's not a kernel panic, it's more like a lockup issue. Try this command before plug the second monitor sudo sysctl kernel.nmi_watchdog=1 or add this to kernel command line, update grub, and reboot nmi_watchdog=1
You still need the pstore and kdump settings mentioned above, see if this time it triggers reboot.
