So, it's not a kernel panic, it's more like a lockup issue.

Try this command before plug the second monitor
   sudo sysctl kernel.nmi_watchdog=1
or add this to kernel command line, update grub, and reboot
   nmi_watchdog=1

You still need the pstore and kdump settings mentioned above, see if
this time it triggers reboot.

If not, try using Alt + SysRq + C see if it triggers reboot(You may try
this while system is running to make sure you press the correct magic
keys)

BTW, do you have a second computer that can ssh into your laptop to see if the 
connection is working, try 
   sudo dmesg -w
and then plug the second monitor see if there is more messages shown on the 
remote computer.
