I can't imagine 3 TBytes of internal disk space without a RAID card. With the latest 750GB SATA drives, you'd need at least 5 SATA headers. With 500 GB drives, 7 headers. A new RAID card from 3Ware to handle 8 or more SATA drives will set you back at least $500, although I've seen some discontinued 3Ware 9500S-8 cards selling on eBay for as little as $250. Figure 8 x 500 GB drives will cost you in the neighborhood of $2200 for the drives alone, so spending another couple hundred on the controller card is a marginal expense.
There's not much point in running a Pentium-M or Turion processor on a server of that size. With all those disks, saving a bit on CPU power consumption isn't going to do much for you. A dual-core Athlon 64 X2 3000+, the entry level processor in the dual-core Athlon X2 line, consumes surprisingly little juice, especially at idle.
