You can do a text only install of ubuntu if you use the alternate
install iso.  Just add ssh and samba, install slimserver, mplayer and
the plugins and you're done.  They're all in repos ('cept the plugins)
so apt-get install for everything.

I've also used CC with equal success, but being based on an older
kernel, it doesn't always support the latest hardware.

Dunno anything about vmware though, or even why you would need/want it?
