I have had stability problems with easytag over Samba. Desktop is SLED 10, server is a Kuro Box running Gentoo. MP3tag is much better in my opinion.
For ripping I use abcde (which uses cdparanoia). Works really well. I've gotten the ripping, tagging (initial from freedb) and encoding done automatically. Pop in a disc and let it go. It even notifies me by email when it's done (and a message on my Slim display).
