Why not?

I've been using LVM for years, and my root filesystem has always been
installed on top of a logical volume.
And I've been extending or shrinking it as needed without any matter.

What didn't work previously was having /boot installed from a logical
volume, but nowadays, with bootloaders like GRUB2, it doesn't seem to
be a problem any more.
