I don't think you will have much luck with the Parallel port.  Epson has 
not written a Mac driver for the parallel port  connection  :-(  You 
might, however, have some luck using a parallel to USB cable and Epson's 
USB driver for the 700.

I have downloaded the Apple Localtalk Bridge software, but have not 
tried using it.  The ReadMe File indicates that it will not work if 
there is another network  connection in the setup.  Your mileage may 
vary.

I have read some interesting experiments where people have been 
successful using some of the "other" printer drivers to get their 
non-supported Epson printer to work with OSX.

PS: To avoid confusing people (me included) I think your Epson 700 is 
like our's.  Our's has a serial connector and a parallel one.
