Check eBay for yourself, but IMHO, in the US the 9600+RAM+HD is worth 
$150-$200, depending on speed. The monitor is worth $25-$50, 
depending on quality/age. That modem may be the Geoport model, which 
is like a Winmodem in that it uses CPU cycles, and may not even be 
compatible with OS X, otherwise it is worth $50. The Laser Printer is 
worth $50-$100, and the hub is worth $10. Total = $335-$410. I 
suppose once you include shipping to Germany it's fair. :-) However...

A G3 or better yet a G4 upgrade and at least another 128 MB RAM. You 
will also need to find out if that serial ISDN modem and LaserWriter 
have OS X drivers. I don't think they do, but even if they do, you 
will need an Ethernet adapter for at least the printer. That will all 
add up. If you are serious about Jaguar, it may be wiser to get a 
supported machine.

Any of the 2 ATi Radeon PCI cards, either the 7000 or the Mac 
edition, and the PCI Extreme hack. You need an AGP port for full 
native support, which the 9600 (and all but 2nd generation G4s or 
higher) lack.

Add a second video card and you can use both. (And the 7000 can drive 
2 monitors by itself.) Otherwise, no, I wouldn't want to go back to 
using a 15" from a 17". However, you can adapt nearly any PC monitor 
to a Mac.

All but iPhoto and iCal have OS 8/9 compatible versions. Instead of 
iPhoto you can use the IMHO superior Mac-only iView MediaPro in 8/9. 
I believe it even comes from Germany. iCal is still so beta that 
you're better off with the free Palm Desktop for Mac software, which 
runs fine in 8/9 without a Palm.

Get the Sonnet Trio (USB/FW/IDE) and you can also use the large, 
cheap IDE drives you will need to store all that video. (Though the 
9600 has enough PCI slots to get less expensive single cards). 
Overall, the Mac in general, and the 9600 offered to you in 
particular is a superb system for running iMovie and the other iApps 
in OS 9, and is worth the money for that. It is certainly feasible to 
run Jaguar on it, but it will take some work (which we would be happy 
to help you with) and may not be as satisfactory. If you have the 
money, you might as well get the iMac or eMac, as that will truly be 
a satisfactory experience (especially if you want to burn DVDs!).
