Personally, I have OSX on a SCSI 18 GB hard drive itself and OS 9.2.2 on another separate drive (your existing drive?) in this 9600. If you insist on pulling the second drive and partitioning, depending on which OS you really will use more, make that the largest partition.
Do you have your existing drive partitioned? You may not want to touch your existing drive except to erase OSX and use it for space afterwards.....
