Given that it's likely no longer available, perhaps you should ask her what students, who do not have and cannot obtain that version are supposed to do. Locking people into a specific version of a proprietary application is a very bad thing to do. She has effectively locked out many people from her class. It appears your problem goes beyond anything OpenOffice can do. This is an excellent example of why Microsoft lock in is a very bad thing. In my opinion, your prof's request is unreasonable.
Another point -- can you find out what "editing function" the professor is depending on with this version-specific requirement? It's obviously nothing standard, or the normal .doc format would work. It sounds as if somebody may have created a macro for her in that version that is not supported in OOo. If so, maybe somebody here could duplicate it under OOo. Then you could do her (and all the other students!) a big favor by getting them onto OOo.

Why is it that Word 2003 "doc" is so important? I don't know if the .DOC format in Word 2003 is different from earlier recent versions of Word. If the class absolutely requires Word 2003, I guess you'll have to buy it (if you still can), but I cannot understand why that instructor is so restrictive. If anyone were to buy a new computer these days, they certainly wouldn't have it and I just checked a major office supply store and they don't have anything older than Office 2007.
