So answering my own questions, the 'rolled' refers to rolling the barbs
from one side of a mallard flank feather to form the wing.
The deerhair head is a small diameter bullethead, with the emphasis on
'small'
The URL above mentions a variety of tying variations that are helpful
according to the species you are fishing for and the time of year.
There is also a beadhead version.
