To pause VoiceOver while it's speaking you'd perform a two finger single
tap. To have VoiceOver start speaking where it left off do a two finger
single tap again.
A two finger double tap will pause the audio stream that's currently
playing. It'll also do some other things, like answer an incoming call.
To leave VoiceOver running but to keep it from speaking, use a three
finger double tap.. This is a toggle, and you'll hear speech off and
speech on as speech is toggled off or on. I don't think this takes any
significant more effort then a triple click of the home key, but it does
require less system resources to just turn off speech then it does to
unload and reload VoiceOver.
