You don't. That is why I keep a working extra copy of a version of an app that 
I use more often. I also don't update just because there are new updates. I 
wait and see from other users for example on this list to see if it is 
accessible. I don't do this with every single update there is because I don't 
necessarily worry about accessibility for every single app. I will also go into 
the app description in the what's new section to see what has changed. If they 
mention anything about the user interface or layout then I might keep a copy of 
the app just in case. However all of this highly depends on the individual app 
for me. I don't particularly care about foursquare one way or the other and so 
in the case of foursquare it doesn't matter to me. However in the case of my 
banking app and a few of my personal favorite games apps I keep back up copies. 
Same with my favorite GPS app and favorite recording app.
