If you for go the update all option, you can update individual apps, so
you can just skip the app you don't want to update. This only works if
you know you want to avoid an update. If you are trail blazing for the
rest of us though, you might want to roll back an update.
My own experience with Four Square is a few accessibility issues seem to
show up in each major update but Four Square is pretty good about
getting them resolved fairly quickly in subsequent minor updates. It
might be a good candidate to skip updating until you get the thumbs up
from the list.
BTW, I've read of some apps available to you if you jail break that will
allow you to pin an app at a certain level. This way, you can avoid some
tedium by using the update all button while keeping some problem apps
from being updated.

the upgrade, you could delete the app from your phone and then sync it

from your computer. Otherwise, you can't do it. I know nothing of jail
