Not sure about any other professionals, but in my business, the main difference 
between headsets and headphones is that headsets have a microphone and 
headphones don't.

that's what we always used to distinguish between the two.

I especially hate it when sellers refer to ear buds as headphones because I 
think I'm buying a pair of headphones, when in actuality, I'm buying a pair of 
ear buds that keep falling out of my ears, or are cheaply made.

In any case, as I said, when we sell headsets and headphones, it's commonly 
known that headsets must have a built-in microphone before they can be 
considered a headset.  As for calling them ear pieces, I guess it would be up 
to the manufacturer, however, I usually tend to associate ear pieces with ear 
buds, and so try to never use that term.
