I think the "Produced by" or "Designed by" button should stay on the site
even after payment. Depending on the design of the site, it can be either a
graphical button or a text link. I do this on all the sites I produce and
have clients who even request it so they can show others who the designer is.

It sounds like they've done some shopping around and have decided they want
a serious business that's fun yet professional. When people see something
successful they want to emulate it without being a clone. Since your
clients are fun people, they want something business-like that will allow
the kid inside each of them to come out without looking childish.
Of course, it would help if they know who they are to start with before
roll-playing with other sites. That sounds more like 'hero' syndrome.
