I have no experience with the FT-100, but with the FT-2000. There the menu setting "072dATa PKTDISP" (Packet mode frequency display offset) is the important one here. I have used the same value of 1000 as set on "073dATa PKT SFT" (Packet mode carrier point frequency). The factory default is different.

What I want to do is testing for at least one hour to use DIG mode in FT8 and see how many QSO's I can make, then switch to USB and compare the results.
In my case with YAESU FT-100, the MENU 38 PKT DISPLAY is the one I need to adjust to 0 (zero) in order to have the TX frequency as close as possible to the FT8 standard frequency available in WSJT-X bands selector.
