Thanks everyone for the comments and advice. There seems to be a few options 
for viable backups of the Entourage database.

Now the only problem is Time Machines inability to do block level backups, 
which the 'sparse bundle' technique is supposed to solve.

Does anyone have experience in using a sparse bundle image to hold their 
Entourage database?
