Steve,
By turning off the Airport or unplugging the wired connection, Entourage
cannot pop mail. Unless you are messing with it it will not be updating
the database the I understand may result in corruption.
Sorry I cannot help you with the automated backup you desire. I know
when I want mine backed up and prefer the manual system
