Certainly applications should have fallbacks to emoji fonts (depends on font rendering libraries) and you need to have fonts installed. Mozilla brings its own font. Do you have e.g. fonts-noto-color-emoji (dependency of fonts-recommended)?

Concerning the issue with Compose keys, it is a rather low level feature, so it should work for applications with proper support of Unicode. I have no issue with xterm. Diagnostics:

    setxkbmap -print

and "xev"
