Traditional German yellow mustard is white mustard, Sinapis alba, Turmeric
and beer.  White mustard is illegal in France except Alsace.

Brown mustard is Black, Indian, or Japanese Mustard (Brassica) and wine or
vinegar. Whole seeds will give it an exciting touch.

Mustard Tipo Americano has turmeric and cheap ingredients.  I doubt if
mustard seed has much contribution.

Mustard reacts for 20 minutes and needs to be opened outdoors downwind from
your face.  It needs to be kept in the dark for six weeks.

Indian mustard has crisper greens.  Seed is available at your local Indian
grocer.
