I’ve used import a lot but never export so I can only point you at the theory.
The process though, would be:
1. Export data to /business_data folder
2. Modify Graph
3. Export Graph and save to your Graphs/Resource_Models folder
4. Create mapping file and concepts folder.
5. Save mapping file and concepts file to business_data folder.
6. Import data via command line using
* python manage.py packages -o import_business_data -s
'path_to_source_file' -c 'path_to_mapping_file' -ow overwrite
--create_concepts create --bulk_load

I suppose it's us wanting to work with developing Arches as we work with the
data and learn Arches, without then having to dump out all the data and
reimport each time we want to add a new node; or change the name or an existing
node; or change the resource-instance a node uses, i.e. from 'Person (Actor)'
to 'Organisation (Actor)'. These changes only tend to emerge once you start
working with the data and shaping it within Arches - hard to figure every move
out in advance I tend to find.
Thanks again for your help - I won't be hitting the delete button for now.
Hopefully there's another way, even if it is export; change Resource Models;
reimport data. If that's the only way, is there a guide on how to do that?

Surely there's the function to be able to change a resource-instances for a
Node without having to delete all the records from the Resource Model? Same
with wanting to change the name given to a node - is there a way to change the
name given to a node without having to delete the entire database?
I really don't want to have to delete all 6,000 Monument records for when I
want to make a change to a resource-instance for a node. Feels a little
extreme.

If you want to delete all the "Monument" instances just go to the graph
designer for that model. Then select the "Manage" button in the upper left
corner. That should give you an option to delete all instances of that model.
I know it's obvious, but this is permanent. There is no way to undo the delete
of all the instances.
