Being an avid coffee drinker, let me throw in the following variables. 
1. Are the temperatures of the boiler the same?
2. Are the shots pulled after temperatures have stabilised or pulled
between heatup of the water in the boiler
3. External variable - The consistency of the grinder. Different
grinders will grind different tasting shots. The type of blades and the
speed of the grinding will affect quality of the grind and prevent
burning of the coffee beans
4. External variable - The age and freshness of the beans as well as
the humidity of the room will affect the grinding and taste. 

So like hi-fi, I feel that one should look at other variables that also
affect our perception of good vs less good. These factors are not
necessarily measurable. One listener may be more sensitive to stimuli
that another will not detect and which may in the face of opposition
prove to be correct after repeated testing when others have dismissed
these differences as imagined or unproven.
