My mother made kale/collard soup frequently. I recall she sometimes added beans, carrots, potatoes but never eggs. This is the first time I ever heard about the eggs. Thank you! All I remember is a big soup pot and eggs. When I asked a cousin many years later, they thought Great-Grandmother must have been making kale soup. The recipes for kale soup I found did not include eggs so this recipe was interesting. Unfortunately none of Great-grandmother's recipes were passed down to my generation.
