The priest writes like Saramago, no punctuation.  Here's my reading:

Sabina, daughter of Anta. de Sou, I say daughter of Domingas (common name)
de Paiva, daughter of Antonio de Sousa queD'haya (father of Domingas) and
of Antonia de Paiva (mother of Domingas), single (Domingas). Born on the
19th day of the month of May of the year 1759 and baptized in this parish
of her mother and of her father who said to me (que disse a mim) he
recognized her as his daughter whom is Joao de Sousa, married man of this
same Parish / by me (referring to baptized) Andre de Sousa Dias, its Vicar,
on the 25th day of same month and year
