Certainly that too would work but it is pretty slow. I don't have much patience for that and I don't cut particularly straight by hand most of the time.
I like scoring the material but you need a very sharp knife and the score has to be deep enough for the surface to fail and the material to crack. That is not always possible. It may not come fully away but you can then just run the blade along the holding bit to separate the pieces. I used to have a hooked knife with a carbide tip for scoring laminate which worked well for that sort of thing. You might be able to cut it with a jig saw particularly if you have an orbital variable speed one that you can slow fully down. Heat is your enemy with a power tool. Another possibility might be a sheet metal guillotine.
