Congratulations on your new Brewtus. I hope it serves you as well as
mine has served me for the past couple of  years.

However, Brewtus will not necessarily give you a better shot than
Silvia, especially if Silvia has a PID. You can get Godshots from
either, especially with a Mazzer. The real advantge of Brewtus is that
it is more consistent (someone said almost boring) and that it has the
two boilers, so no recovery time is necessary between shots or between
shots and steaming. My PIDed Silvia can give just as good a shot as my
Brewtus, although not as consistently, and not as often.

That said, if you aren't getting reddish crema with tiger stripes, you
may be a little under extracted. Try grinding a little firmer and
tamping a little harder. Don't worry about exceeding the magic 23
seconds on the pull; I find a little longer is better on Brewtus. Try
dialing in the Mini until you get about a 30 second shot and see what
you think.

Good coffee is critical, of course. One week old could be ok;
different blends age differently and I'm not familiar with Gorilla. I
roast twice a week, so I never go over five or six days. Try some 2 or
3 day old beans, if you can get them, and see if that helps.

I've used the La Marzocca ridgeless on both machines with good
success. It's all I've used on Brewtus, so I can't say whether it
makes a difference. I assume yours is a double (is there a ridgeless
single?); I've always found it very difficult to pull a really good
shot from a single basket. Many shops only pull doubles and throw out
half the shot if they really need a single.

Have you tried a crotchless portafilter? My Brewtus came with both
kinds, and I greatly prefer the crotchless.
