Helpful suggestions, thanks. I may invest in a bottomless portafilter if I cannot get better shots with experimentation.
Brewtus is giving me coffee just as good as I've gotten with Silvia, and absolutely it's more consistent. The basket is the La Marzocca double ridgeless, and i'm switching between that and the ridged brewtus stock, using the technique of filling/tamping the basket and dropping it into the portafilter to keep the portafilter hot in the grouphead as long as possible. I've made the grind finer and actually tamp not quite as hard and the longer shots of 30 seconds are better, thanks. Will keep playing (looking forward to some fresh beans) and let you know & probably ask for more advice. Thanks! also, has the analogy of silvia/brewtus to female/male characteristics been made? pls excuse this, but i'm compelled.... silvia is slim, pretty and graceful - everything in the right place, tempermental, requires a lot of attention and careful handling - a lot of prep work to be ready...does not always reach that perfect shot..... brewtus is big, tough, a brute, clunky... works with whatever, takes little work to be ready... and is consistently "right on the money" (if one remembers a woody allen line...)
