For a long time I ran 93-96 temps, partly becuase I think the Brewtus manual says to start with 96. Also, partly because after reading Schomer's book, and that supposedly magical 203.5F it translated into that. But, these days I'm typically running about 91. This is both after talking to a few of the roasters I use, as well as experimenting and adjusting like you've said. My shots have improved a lot with the lower temps. I don't think I've ever had good luck below 90, and I also can't really remember the last time I ran over 93. I would imagine that a 1 degree or so amount of variation among units and such is not uncommon. I look at it as more of way just to maintain consistency and to adjust up or down as needed, and less about whether the temperature itself is "right".
