I seem to remember Abe and others playing with the offset. Stock was 7, and they played with 6 and 5. It can have an effect on how the temp reacts when pulling repeated shots in quick succession. The shots can get hotter. I think if there are a couple of minutes (?) lapse between shots, the brew temp won't creep higher. - Dennis
