This technique works even better with Gaggia portafilter baskets which have
smooth sides. And you leave the wire in. The pressure from the straight
sections of the PF retainer wire provides a grip that keeps the basket from
accidentally dropping out, but you can easily pull the basket out with your
fingers after you knock and rinse it. Using baskets with a retainer ridge
means you get the "snap" of the basket seating itself every time you insert
them ... which risks breaking the seal of the side of the puck to the wall of
the basket and getting channelling.

The wire removed solution means the basket will fall out when you try to knock
out the puck. Or you can take the hot basket out and hold it in you fingers
while you knock it. Not a lot of fun. (The wire and ridge were a solution to
the falls out problem that bugged baristas from the beginning.) I would
recommend that you order three or four Gaggia baskets and discover how nice and
tidy the process is. And WLL even has a small sale on at the moment.
