I worked at a pizza place back in the late 70's one of the best and most 
interesting thing we ever created (not including the experimental mushroom 
pizzas) was a thin crust pizza with minimal sauce and 3 or 4 kinds of cheese.  
We would bake it until it had about five minutes to go, pull it out and put 
fresh slices of peaches on it.  I think we also added another thin layer of 
cheese and bake it for another 4 -5 minutes.  I was just the dishwasher and 
busboy so I wasn't really involved in the cooking but if memory serves me this 
was the recipe if you will and it was awesome.

We also did a fair amount of experimenting with fresh tomatos.  Something like 
a combination pizza with lots of goodies nearly completly baked then take it 
out put fresh slices of tomatos and finnish baking for 4 - 5 minutes just 
enough to warm up the tomatos without really cooking them.
