I was thinking the same thing, I worked for a caf� in Boston that was similar, it was mainly prep in the am and final touches at serving time. We were allowed to be creative and add specials to the menu. Some other avenues he may want to look into are catering companies for side work and markets that sell prepared food/meals.

Then, during the actual serving hours, he jokingly referred to himself as a "gourmet cheese melter," as most of their prep during serving hours was just final touches and cheese melting.
