Thanks <everybody> for the feedback. Yes, Bay Area (East Bay - Contra Costa County). Actually, there aren't a lot of food jobs around right now. And sous chef is above the level he's at. Experience isn't everything, _skill_ has a lot to do with it, as does speed. He has been getting experience, but apparently isn't fast or aggressive enough. The question is whether he keeps at it until it gets better, or decides it won't and changes fields. Not easy either way...
