It would appear that Shaw's network is a managed segment based around
'Packet Cable':

So they are most likely using PCMU or PCMA codecs.

The big difference between Vonage and Shaw is that Shaw have ultimate
control of the cable. Jitter, dropped packets, etc can make a huge
difference on perceived quality.
