Baked Pasta With Three Cheeses 6 tablespoons unsalted butter 6 tablespoons all-purpose flour 4 cups milk 1 1/2 cups shredded Fontina cheese 1/2 pound Gorgonzola cheese, cut into small pieces 1 cup grated Parmesan cheese Salt 3/4 pound pasta 1/2 cup fresh bread crumbs In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook, stirring constantly, for 2 minutes; do not brown. Gradually whisk in the milk and cook, stirring constantly, until the sauce is smooth and thickened, about 5 minutes. Add the cheeses and stir until the cheeses melt. Salt to taste. Remove from the heat and set aside. Preheat the oven to 375 degrees F. Lightly grease a shallow 2 1/2-quart baking dish. Meanwhile, bring a large pot 3/4 full of lightly salted water to a boil. Add the pasta and cook until al dente, 10-12 minutes. Drain and add to the sauce. Toss gently to mix. Transfer the pasta and sauce to the prepared dish. Sprinkle the top evenly with the bread crumbs. Bake until the top is golden brown and the sauce is bubbling, 25-30 minutes. Serves 6
