The crust goes over the top of the peaches. If I use a pie pan, I crimp the edges because that's my favorite part. So, it's peaches on bottom and crust on top. Not exactly a cobbler but it works for us.

I am assuming you place the crust on the peaches so that the rounded edges are down in the peaches and the bottom is the top?

Or, do you flatten it all the way across?
