This is A sausage balls recipe with a twist. Italian sausage is used instead of breakfast sausage. Green pepper and onion are also included. This differs from the basic sausage+biscuit mix+cheese variation which is so common.

Sausage balls

although I originally got this recipe from the Jimmy dean Italian bulk sausage package, I added my own personal changes

2 pounds Italian sausage (half hot and half mild)
1-1/2 cups biscuit mix like bisquick
½ cup finely chopped onion
½ cup finely chopped green pepper (I left this out)
½ teaspoon garlic powder  (I used 1 teaspoon)
4 cups grated sharp cheddar cheese = 1 pound (I used half sharp cheddar and half pepper Jack)

Mix biscuit mix and garlic powder together. Mix all other ingredients, adding the cheese last.

Make into one inch balls and bake at 375 dg for 15 minutes or until brown

I used my small cookie scoop and made about 6-7 dozen. They were a good size.

I put parchment paper on cookie sheets to avoid sticking.

Uncooked balls can be frozen and thawed then baked as directed above

for firmer sausage balls, use 3 cups biscuit mix and 2 more cups cheese. (I never did this)
