If you are getting only 175 degrees farenhight on the cylinder head guage your thermocouple or guage is probably broken.
As to 180 on the oil. That seems low for summer but not impossible if you are well baffeled. You should remove the oil temp sender and calibrate it in some hot water with a thermometer.
